Potala Palace and momos. Everywhere in the world has its own version of the
humble dumpling and in the Himalayan region, that version is known as "momo."
This larger-than-bite-size dumpling consists of al dente wheat wrappers
encasing exotic combinations of meat, vegetables and all things in between.
The momo hails from Tibet where it is mostly stuffed with yak meat. It was
prized amongst the plateau's nomads as much for its flavor as its
portability. Today, the momo is consumed enthusiastically from Nepal to
Bhutan to India. Steamed, fried or swimming in soup and doused in chili, the
momo has adapted to local ingredients and palates as it traversed mountains
and valleys.read more
